OK, normall speed adjustment + and - should give you an increment and decrement of 5 mph. Holding SET should decrement the speed 1 mph steps, similarly holding RESUME should increment 1 mph steps.

I.e. Buttons Left and right 5 mph, buttons above and below 1 mph

With what you're describing has it switch to speed limiting instead of cruise? Switch to the assistance menu to check.
