The only time I ever switch off Auto Hold is in tricky parking manoeuvres, so that you're not always fighting the brake.

That's not a bad idea, but I'm mainly thinking about using 'Park Assist', where Auto Hold tries to fight it all the time, and it certainly makes fine use of the accelerator virtually impossible.

Once the parking brake and Auto Hold are both switched on, you shouldn't really have any need to turn either off, as they will both work automatically.
As I said above the only time I might have the need to turn off Auto Hold is in a tricky parking situation where it sometimes interferes with trying to balance the brakes with the accelerator.

As an aside to this it is possible to creep while in gear if you only lightly touch the brake pedal, so that the service handbrake doesn't operate, then if needed, a harder press on the pedal will operate the service handbrake. Believe me, It's a lot harder to describe than to do.

BishBash, what you've described at the end of your video is the Emergency Brake function, which is documented in the manual. It can be used to stop the car in the event of a brake failure and can also be used by the passenger in the event that the driver is incapacitated.

The 4 elements of my brake lights do seem exceptionally bright. So at night if stopped for more than a few seconds with a car behind me I will manually apply the handbrake to over ride autobrake.
I think the dilemma that presents itself here is, would you rather dazzle the car in the queue behind or warn approaching traffic from behind that they are coming up against stationary traffic!.
I think I'll be leaving the brake lights on.
